From Panama to Mexico in 2 months
I was inspired by the Flemish TV documentary ‘Sergio over de grens’. The well-known chef Sergio Herman invites friends in each episode to explore a part of the world through its cuisine. I decided to spend two months in Central America and split the trip into three parts.

The first leg of the journey is a week in Panama with my brother
Panama was surprisingly beautiful! A real melting pot of everything Central America has to offer: Panama City with its skyline set against the backdrop of the old colonial town, the delicious and varied cuisine, and the stunning beaches at Bocas del Toro.
The main course is three weeks in Costa Rica and Belize with my partner
Costa Rica was a destination we knew a bit more about. Even so, the rafting, the canyoning trip and the ziplining amidst the stunning natural surroundings left a lasting impression. Belize was a complete unknown to us. But as soon as we arrived at The Lodge at Chaa Creek, we realised we’d been completely wrong! After a few action-packed weeks in Costa Rica, it was a real breather on our trip.
The icing on the cake: a month travelling through Mexico on my own
Mexico, a country that has everything mentioned above. It’s very difficult to single out just one highlight, but what I found particularly special was meeting Johan (founder of Sapa Pana Travel) and Xio in Mérida.
